Meal Pattern Contribution: 1/2 cup provides 1/2 cup total vegetable (1/8 cup additional vegetable, 3/8 cup dark green vegetable), 1/4 cup fruit.

Apple & Broccoli Salad Recipe

Ingredients


  • Fresh Broccoli | 4 cups

  • Diced Apple Grn/Red | 2 cup

  • Raisins | ¼ cup

  • Shredded Carrots | 1 cup

  • Sliced Red Onion | ½ cup

  • Plain Yogurt | 1/8 cup

  • Mayo | 1/3 cup

  • Apple cider Vinegar | 1 tsp

  • Honey | 1 Tbsp

  • Salt and Pepper | To taste



Directions


  1. Mix yogurt, mayo, vinegar, and honey. Season to taste and set aside.

  2. Chop the head of broccoli, separating the florets from the stems. Peel the stem, removing the outer layer, and then slice the stems thin.

  3. In a large bowl, add the florets, sliced stems, diced apples, raisins, shredded carrots, and sliced red onions.

  4. Add yogurt and mayo mixture to the veggies and fruits.

    Note: Age group 1-5 years old. Children under one year old do not serve honey. Remove sweetener.
