Note: Add 1% milk to make it a creditable snack. Age group 1-5 years old. Combination meals like soup require 1 cup serving for both age groups.

Chicken Noodle Soup Recipe

Servings: 8 (1 cup each serving)

Ingredients


  • Butter | 1 Tbsp

  • Onion | ½ cup

  • Celery | ½ cup

  • Carrot | 1.5 cups

  • Chicken Broth | 14.5 ounce

  • Veggie Broth | 14.5 ounces

  • Chicken, cooked | ½ lb.

  • Egg Noodles | 2.5 cups

  • Dried Basil | ½ tsp

  • Dried Oregano | ½ tsp

  • Garlic Powder | 1 tsp

  • Salt | To taste

  • Pepper | To taste



Directions


  1. Melt butter in a large pot over medium heat. Add onions and celery and cook until tender, about 5 minutes.

  2. Add chicken broth, vegetable broth, chicken, egg noodles, carrots, basil, oregano, garlic, salt, and pepper. Stir and bring to a boil.

  3. Reduce heat and simmer for 20 minutes until soup has reached 165 ◦F or above.

  4. Before serving, make sure the soup is cooled down to 150 ◦F -145 ◦F.

Note: When scooping soup into bowls, make sure to first scoop protein, vegetables and pasta and then top with broth.
