These Spring Veggie Protein Bites are the perfect combination of fluffy eggs, creamy cottage cheese, melty mozzarella, and crisp seasonal vegetables—all baked into portable, easy-to-enjoy muffins.


Bake a batch at the beginning of the week, store them in an airtight container, and grab one on the go. They’re just as delicious reheated, making them a great solution for a hassle-free breakfast.

Spring Veggie Protein Bites Recipe

Yield: 8 – 1 muffin

Ingredients


  • Eggs | 4 each

  • Cottage Cheese | ½ cup

  • Mozzarella Cheese | ½ cup

  • Cornstarch | ½ Tbsp

  • Vegetable, mixed | ½ cup

  • Salt & Pepper| to taste

  • Onion Powder| ¼ tsp



Directions


  1. Preheat oven to 350 ◦F degrees and grease or line muffin cups with paper liners.

  2. Add eggs, cottage cheese, mozzarella cheese, cornstarch, onion powder, salt, and pepper to a blender or food processor. Blend all ingredients until the batter is smooth.

  3. Add a spoonful of mixed chopped vegetables of choice (spinach, green onion, asparagus, broccoli) to each muffin cup.

  4. Pour the egg batter over each muffin cup.

  5. Place a muffin cup on top of a baking sheet, pour water into the cup, and fill it halfway.

  6. Bake for 20-25 minutes until an inserted toothpick comes out clean and dry.

  7. Allow muffins to cool before serving.


Note: Pair with a fruit and 1% milk to make it a complete breakfast.
