Spring Veggie Protein Bites Recipe

Ingredients
Eggs | 4 each
Cottage Cheese | ½ cup
Mozzarella Cheese | ½ cup
Cornstarch | ½ Tbsp
Vegetable, mixed | ½ cup
Salt & Pepper| to taste
Onion Powder| ¼ tsp
Directions
Preheat oven to 350 ◦F degrees and grease or line muffin cups with paper liners.
Add eggs, cottage cheese, mozzarella cheese, cornstarch, onion powder, salt, and pepper to a blender or food processor. Blend all ingredients until the batter is smooth.
Add a spoonful of mixed chopped vegetables of choice (spinach, green onion, asparagus, broccoli) to each muffin cup.
Pour the egg batter over each muffin cup.
Place a muffin cup on top of a baking sheet, pour water into the cup, and fill it halfway.
Bake for 20-25 minutes until an inserted toothpick comes out clean and dry.
Allow muffins to cool before serving.
Note: Pair with a fruit and 1% milk to make it a complete breakfast.
