A wholesome favorite for little food explorers! This recipe is a quick, colorful, and nutritious lunch for children. Veggie Delight Pinwheels are a hit with children. These bite-sized spirals are fun to look at, easy to handle, and packed with flavor and nutrients that support growing bodies.

The rainbow of veggies, crisp red bell peppers, cool cucumbers, and sweet shredded carrots, adds visual appeal and a variety of textures. The creamy hummus and smooth slice of cheese bring everything together in a comforting and exciting way. Plus, the pinwheel shape makes eating veggies feel like a game, not a chore.


Nutritional Benefits

Whole Wheat Tortillas

Rich in fiber and complex carbohydrates, whole wheat tortillas help keep kids full and energized, supporting digestive health and sustained energy.


Cheese

A great source of calcium and protein, cheese contributes to strong bones and muscles. It also adds a familiar flavor that many kids enjoy. This recipe provides 1½ oz meat alternate, which helps meet protein needs.

Veggie Delight Pinwheels Recipe

Ingredients

  • 100% Whole wheat tortillas | 8 each

  • Cheese, sliced | 8 – 1 oz slices

  • Hummus | 1 cup

  • Bell pepper, red | 1 cup

  • Cucumber, | 1 cup

  • Carrots, shredded | ¼ cup


Directions

  1. Lay out one tortilla and place a slice of cheese in the center of the tortilla.

  2. Spread 2 Tbsp of hummus over the cheese.

  3. Add ¼ cup of mixed vegetables ( cucumber, bell pepper, carrots).

  4. Roll the tortilla up and slice into 6 round pieces that look like pinwheels. This equals one serving. Repeat the process to make 8 servings.


Note: Age group 1-5 years old. Pair with 1% milk and fruit to make it a complete lunch.
